Spinach-Blueberry Brownies
Ingredients
6 tbsp Unsalted Butter
¾ cup Semi Sweet Chocolate Chips
2 Eggs
2 tsp Vanilla
½ Cup Sugar
½ Cup Purple Puree (see below for recipe)
¼ Cup Flour Blend (see below for recipe)
¼ Cup Rolled Oats, Ground
1 Tbsp Cocoa Powder
Directions
- Melt the butter and chocolate chip together and set aside.
- In a mixer, mix together eggs, vanilla, sugar, and purple puree and slowly add in the chocolate mixture.
- Add the flour blend, rolled oats, and cocoa powder in a separate bowl and add to the liquid mixture. Mix until well combined.
- Spray an 8×8 square baking pan and place brownie mixture into the pan. Bake for 25-35 minutes or until a toothpick comes out clean in a 350 degree oven.
- Cool and serve
Flour Blend: 1 cup All Purpose Flour, 1 cup Whole Wheat Flour, 1 cup Wheat Germ
Purple Puree: 4 cups cooked spinach (drained) 2 cups blueberries (fresh or frozen), ½ tsp lemon juice and 1 tsp water. Combine all the ingredients and place in a food processor and puree until smooth

I need to try this. Might be the only way I get blueberries and spinach in my daughter. The kids don’t notice?

I don’t believe in trying to “sneak” healthy ingredients into foods–I let me kids know that I’m trying something new. Instead of making it about ‘Hey, I’m making good-for-you brownies’ I let them know that I’m making something fun. So they knew that these were spinach brownies and they were excited to give it a go. My oldest said she could taste the spinach and didn’t ask for seconds, but my younger two not only thought it was cool they requested the brownies as their dessert in their school lunches.

What’s the taste like? More blueberries? Or spinach? Or does the chocolate hide the spinach taste?

I LOVE spinach so if there is any spinach aftertaste it doesn’t really bother me. You can tell these aren’t standard brownies, but they are good. I suggest eating them on day two to give the flavors time to blend. Also, I like them cold. My kids took them to school as dessert in their lunches and they really, really liked them.

Yum–I’m going to hold you to that. I love avocados in anything.
