Here’s my secret–the rice has to be leftovers. I’ll use leftovers from takeout restaurants, for example. But two or three-day old rice from the fridge usually works perfectly. My rice of choice is Jasmine and it tends to be less moist too.

I love pineapple fried rice and I love grilled pineapple so this sounds like a terrific recipe even though I’m reading it right after dinner
